Title: Lettuce and Cilantro Salad with Jerk Dressing

Yield: 1 Batch

SALAD
1/2 Head Romaine [Cos] lettuce
2 Scallions
4 Sprigs fresh cilantro
DRESSING
4tbVeg oil
2tbJerk sauce
2tbBrine from a jar of pickled banana peppers
1pnSugar
  S&P

Tear or chop the Romaine [Cos] lettuce leaves into bite size pieces.

Sliver the scallions [green or spring onions] vertically into thin strips and then chop into 1-2" pieces. Sprinkle over the lettuce in a salad bowl.

Chop fresh cilantro leaves and stems; sprinkle over salad and toss. Have the salad sit refrigerated for about an hour to let the onion and cilantro flavors develop.

In a small jar with a tight fitting lid, add the dressing ingredients and cover. Shake vigourously until the dressing emulisifies. Pour over the salad, toss lightly and serve.
